La rhéologie est la science qui étudie l'écoulement et la déformation de la matière sous l'effet de contraintes appliquées. Le terme provient du grec rheos (couler) et logos (étude). Elle s'intéresse aux matériaux dont le comportement ne peut être décrit uniquement par l'élasticité classique (loi de Hooke) ni par la viscosité pure (loi de Newton), et qui combinent des aspects solides et fluides : c'est la viscoélasticité et la viscoplasticité.
